No matter what kind of Tea you buy be it Black Tea, Assam Tea or Darjeeling Tea the one thing all these varieties will have in common is their abilty to quench your thirst and relax you. The properties of tea are truly remarkable and far too many off us take them for granted, remember that a large portion of the polulation are not as fortunate as most of us.

We should never take for granted the things that many people would consider a luxury, after all we do not have to search for food and drinks in the way that many unfortunate folk do so next time you have endured the “exhausting” task of “sitting” at your PC in order to order your gourmet or exotic blend of Tea … remember when you actually get to drink your beverage, how very lucky you are indeed.

Thank you for Tea..

The Perfect cup of Tea -

Making the perfect cup of tea has been the topic of much debate for many centuries now, I myself have been drinking tea for well over thirty years and below is my idea of what it takes to make the perfect cup of tea.

1. You should always use fresh water and not just add to what is already in your kettle. The ideal thing to do is use spring water due to the fact that it is pure and lacks additives such as chlorine and fluoride, these kind of additives will mess with the taste however you can if you must use tap water after it has been run for a minute. No matter how good your tea is good quality water is a key element to the overall quality.

2. Teapots made of china or earthenware are essential. Enamel, silver or copper parts can have a drastic impact on the flavour however stainless steel is acceptable.

3. The pot should be warmed at the start of proceedings.

4. For each cup of water you are going to add place one level teaspoon full of tea. Although some people may like to use a straining device when adding tea it is generally thought that adding loose tea is the best method.

5. Boiling water should be poured directly onto the leaves and then stirred the before the lid is placed back on the pot.

6. The tea should be left to “brew“ or steep for at least five minutes. If However you are making green tea 3 minutes is all that is required.

7. Be very wary of “over brewing“ the leaves as this can result in a really bitter and not very nice beverage.

8. Where you aware that the type of cup you drink from can change the taste of tea?. Using a china cup is the answer as this will not tarnish the taste of your tea, also using a deep cup as opposed to a shallow cup will keep your tea warmer for longer.

9. Now to the important part, always add your milk before you add the tea. This is the part that is the cause of most arguments however making the tea in this way will ensure the right amount of milk is added and your tea will not spoil.

From the scientific angle the UK Royal Society of Chemistry (RSC)has warned against the practice of placing milk to tea after it is brewed. They deduce that slowly poring a stream of milk into boiling water makes “denaturation of milk proteins” more possible. Now we wouldn‘t want that now would we?! At very high temperatures, milk proteins - which are generally all curled up, start to unfold and link together in lumps. This is the way that UHT [ultra heat-treated] milk is made, and is why UHT milk does not taste as good as normal fresh milk,” says Dr Andrew Stapley, a chemical engineer at the UK’s Loughborough University. It is far better to have your cold milk massed at the bottom of the tea cup, ready for the hot tea to be added. This allows the milk to cool your tea, rather than the tea ruinously raise the temperature of the milk.

10. Last of all, tea really shouldn‘t be drunk with sugar. It has to be said though that most people do not like tea without at least a small amount of sugar so the best advice in this area is to try and cut down the amount you use, better for you and you will be able to appreciate the flavour of your tea as apposed to the sweetness of the sugar.
